Instructions: Cook on rack @ 400 degrees for 7-9 mins

The Kashi thin crust pizzas are rather unique. The crust is like a giant whole wheat cracker both in looks, crunch and taste. The reason I bring this up first is that this would make it or break it for a lot of folks. If you don’t like giant crackers, you won’t like this pizza. While I have had better thin crusts, the health benefits of Kashi’s crust makes it worth putting it in “my tummy”. Now on to the toppings. Lots and lots of sliced mushrooms, big ones, too. However I couldn’t tell the three different mushrooms apart. I guess once they are sliced and cooked, all mushrooms look the same. The spinach was scattered about, some in large clumps. The cheese though, was evenly distributed and thicker than I expected. The taste is very flavorful. Obviously the taste is predomantly mushroomy, but not in a bad way. My only complaint is that the spinach was a tad waterlogged. All in all, this a good pizza to ha ve when you want a mushroom fix and get some other health benefits not normally found in pizzas.
